The bar program
Ember is a fourteen-seat room behind an unmarked door on Gate Avenue. No standing, no playlists above conversation level, no drink that takes longer than the story you tell while it's made.
The program runs on a working barrel rack — six casks resting negronis, manhattans and a rotating house experiment — and a back bar built slowly, bottle by bottle, around smoke and dried fruit rather than labels.
Everything is measured twice and poured once. If a drink isn't right, it goes down the drain, not across the bar.
